Don Zoilo was just about the ultimate sherry buy in the 1970s. The company was founded in 1877 by Sir Alexander Williams and his brother-in-law Arthur Humbert. Williams & Humbert was born. Many of the original soleras are still in use. At the beginning of 1900, the company was taken over by the then famous José Medina family. Under the energetic leadership of the four brothers, José, Nicolas, Jesús and Angel, José Medina y Compañia becomes a global player in the Sherry world, their trade name is Williams & Humbert to this day.
In the Sherry world it is unique to feed vintage sherry and organic is already very rare. Williams & Humbert is the regional pioneer in both areas. There are 'vintage' Sherries dating back to the 1920s. It is considered the oldest and most complete 'library' of vintages in the entire area. The legislator uses these very old wines as a reference for other old wines in the area. In addition to these super rare wines, there is also an organic production. They were the first to launch an organic Vintage Fino made from 100% organically grown palomino grapes. To fortify this wine, organic alcohol is used. This project is in the hands of winemaker Paola Medina (1978). She has been with Williams & Humbert since 2010 and has been Technical Director since 2012. She holds a degree in chemistry plus a master's degree in viticulture and winemaking from the universities of Cadiz and Madrid.
